The relationship between Champagne Salon and Champagne Delamotte is best understood as that of two sister companies, because they benefit from a shared know-how.
Together, they have been developing the art of Blanc de Blancs. Salon has been a pioneer in the production of mono-varietal wines since 1905 and Delamotte, in true Champagne style, has been blending Chardonnay from the Côte des Blancs since 1949.

Headed by Didier Depond, Salon and Delamotte are linked as much by their common points as by their differences and their complementarity.

Episode 1 A bond

In the heart of the Côte des Blancs, the village of Mesnil-sur-Oger owes its reputation to its exceptional terroir.
This is where Salon Champagne was born in 1905.
It is also where Champagne Delamotte settled at the beginning of the 20th century.
The two houses would grow together and make this terroir their common denominator. Their vineyards face each other: the Salon garden and Delamotte’s Roses plot are located halfway up the hillside in the upper part of the village.
Chardonnay, the king grape variety of the Côte des Blancs, is also at the heart Salon and Delamotte’s identity. The Mesnil Grand Cru terroir, home to a particularly chalky subsoil, produces some of the very best fruit by providing a freshness and straightforward flavor to the fruit, as well as guaranteeing a rarely equalled ageing potential.
The vineyard’s sustainable, plot-based and meticulous viticulture enables the Salon and Delamotte teams to harvest grapes at optimum maturity.
In the cellar, the same attention is paid by a single team: the vintage will only be selected by Salon and Delamotte if the sugar and acidity levels are perfectly balanced.

Episode 2 Authenticity

Champagne Delamotte is one of the very first wine merchants, having been founded in Reims in 1760. Passed down from father to son, the Delamotte family succeeded one another: François, Alexandre and then Nicolas-Louis, known as the knighted Delamotte Barrachin, made it an essential house. During Charles X’s coronation in 1825, the people celebrated with Delamotte Champagne.
The house experienced a renaissance in Mesnil-sur-Oger, where it clearly turned to its favourite grape variety: Chardonnay.
In 1949, it produced its first Blanc de Blancs champagne from villages in the Côte des Blancs, Le Mesnil, Oger and Avize, which were already known as great white wine terroirs.
In the Côte des Blancs, another figure made a name for himself at the beginning of the 20th century: an aesthete and wine enthusiast, Eugène-Aimé Salon. His dream was to find the recipe that would allow him to make a great Champagne wine. By great wine he meant a long-lasting wine, a wine with great ageing potential over the next 20, 30, 40 years.
In 1905, his dream took shape, only the best harvest years would be selected and the wine would always be the fruit of a single harvest. The equation became complete with the choice of a single grape variety, Chardonnay, from a terroir already renowned for making wines that would stand the test of time, Mesnil-sur-Oger. And thus, he created the Blanc de Blancs.

The Delamotte Brut offers a beautiful bouquet of citrus fruits with peppery notes. On the palate, the roundness of its biscuity notes leads to a play on textures. A few gougères with Comté cheese to keep it soft, or crunchy radishes to bring acidity and spiciness together.

Delamotte Blanc de Blancs

This monovarietal champagne immediately reveals a long structure that is perfectly suited to seafood. The wine, with its explosive minerality, will compliment Breton lobster well. A few drops of sweet and sour sauce with pink peppercorn will bring a smoothness to the dish and bring out the creamy notes of butter and pastry crust, the signatures of this Blanc de Blancs.

The opportunities to taste Salon are few are far between. Only 37 harvests have produced a vintage in the 20th century. Despite its long ageing potential, upon release, Salon displays a dazzling youthfulness. For an ideal tasting experience, great importance is given to gastronomy.
